eggplants
we had a few eggplants lounging about on the counter, so i went searching for a new eggplant recipe for dinner last night, and found this one.
it turned out delicious. its sort of like a mix between a sloppy joe and a meatball sub. we had french fries, corn on the cob and blackberries with it. yay for summertime.
